Ingredients

For the meat:

  • Pork fillet 800 g
  • 2 tbsp turmeric
  • 1 tbsp salt
  • Rosemary
  • 3 cloves of garlic
  • Vegetable shortening

For the sauce:

  • 250 g cranberries
  • 3 tbsp sugar
  • 1 tbsp cinnamon
  • Pinch of sea salt
  • 300 ml of water

1. Rub the meat with salt and turmeric.

2. Peel the garlic cloves. Cut two deep pockets into the meat and place 2 garlic cloves into them.

3. Place the meat with a twig of rosemary and another garlic clove into the frying tube. Roast in the pre-heated oven at 180 °C for 40 minutes.

4. Prepare sauce in a saucepan. Place cranberries, sugar and cinnamon into the pot, pour over water. Crush the berries and reduce the mixture to a jam-like consistency.

5. Remove meat from the oven and let it cool down. Cut into pieces.

6. Garnish with the cranberry sauce, serve with potatoes and sauerkraut.
