Meatballs „Tefteli“ in tomato sauce

 

Tefteli are an old international dish. In some countries they are called meatballs. In the Russian language, the name "Tefteli" has established itself, possibly originating from French.

Ingredients

  • 600 g minced pork
  • 2 eggs
  • Salt and ground pepper
  • 2-3 pieces of celery
  • 500 g of tomatoes
  • 1 large pepper
  • 3 tablespoons tomato paste
  • 50 ml of vegetable oil
  • 2 thyme branches
  • half a chilli pepper

Description

"Tefteli" (with emphasis on the first syllable) are often confused with meatballs. Unlike meatballs, Tefteli are baked and not cooked. Two things are essential for successful Tefteli : fresh meat and a delicious sauce.

A homemade tomato sauce always tastes best. All you have to do is stew the vegetables and purée with a hand blender.

A sauce with a very smooth consistency is obtained by skinning the vegetables. For this you have to put peppers in a hot oven and then peel off the skin under running water. The tomatoes lose their skin while stewing. You just have to carefully fish them out of the pot .

Try to cook without flour when preparing Tefteli. Thanks to the eggs, they can be made without flour and taste much better.

1. Add the egg, salt, pepper and the thyme leaves to the minced meat and knead well.

2. Make meatballs and refrigerate for 30 minutes.

3. Put the meatballs in a baking pan and bake in an oven at 200 ° C for 15 minutes.

4. Bake the pepper in an oven at 200 ° C for 15 minutes.

5. Remove the pepper from the oven and place in a bag for 10 minutes. Remove the paprika from the bag and peel off the skin under cold water.

6. Cut tomatoes into slices.

7. Cut celery.

8. Chop chilli pepper.

9. Cut peppers.

10. Mix all ingredients with thyme, salt, sugar and pepper

11. Put all ingredients in a pan.

12. Add the tomato paste and simmer for 30 minutes.

13. Remove the sauce and allow to cool.

14. Purée with a hand blender.

15. Pour the tomato sauce over the Tefteli and bake for another 30 minutes at 200 ° C.

16. Serve warm with fresh salad.
