Buckwheat with beef and mushrooms

Buckwheat: Russia's superfood is also on the rise in Germany. Vegetarians and vegans can adapt this recipe to their needs by simply replacing the meat with tofu or crunchy vegetables.

Ingredients

  • 300 g buckwheat
  • 800 g of beef, cut into pieces
  • 300 g white and brown mushrooms
  • 1 big onion
  • 30 g butter
  • 1 tbsp coriander seeds
  • 1 bay leaf
  • Bunch of dill
  • 2 tsp salt

This dish is peculiar because the rather dry and not very aromatic buckwheat soaks up the tasty juices of meat and mushrooms. This creates a succulent, delicious and filling dish. It is possible to replace the beef with pork or chicken. Finely grated carrots can be added too.

1. Cut mushrooms into big pieces.

2. Finely dice onion.

3. Fry onions in butter until golden yellow.

4. Crush coriander in a mortar.

5. Add mushrooms to the onions.

6. Add beef. Fry for 4 minutes. Add buckwheat and pour in 1 l of water.

7. Simmer the meat and mushrooms until the buckwheat is cooked.

8. Finely chop dill and add.

9. Season with salt and stir.

10. Serve the dish hot.
