Eastern European soup “Solyanka”

Solyanka: When Slavic people hear this word, their eyes light up. This hearty soup is one of the most popular dishes in this region, which is often cooked and always eaten with pleasure.

Ingredients

  • 600 g pork belly
  • 600 g cooked pork meat
  • 1 onion
  • 1 carrot
  • 150 g bacon
  • 3 tablespoons tomato paste
  • 3.5 l broth
  • 1 lemon
  • 100 g of green or black olives
  • Fresh green

Description

This stew is a very popular dish throughout Eastern Europe. It does not surprise that in the course of time innumerable versions of Soljanka were created. Every housewife has her own recipe developed with secret ingredients and tricks that remain in the family. The traditional Solyanka is made with meat, but there are now versions with fish and even mushroom solyanka for vegetarians.

All variations of the dish have slightly sour taste, which comes either from salt cucumbers, vinegar or lemons. Our version uses lemon juice, which adds a fresh touch to this soup together with olives. Important are fresh green herbs in the soup. They deliver a lively contrast with the color and taste of the soup.

1. Cut carrot into circles.

2. Finely chop onion.

3. Finely cut bacon.

4. Dice pork belly.

5. Grate lemon zest, cut lemon into slices.

6. Fry bacon and pork belly in a pot.

7. Add onion and fry.

8. Add carrot and fry.

9. Add tomato paste and pork, stir well.

10. Fill up with broth and add lemon zest.

11. Cook for 30 minutes.

12. Add olives, lemon and fresh green herbs before serving.
