Okroschka with kefir

 

Okroschka with kefir is the most popular among fresh summer soups. This dish is easy and quick to prepare.

Ingredients

  • 300 g cooked sausage
  • 250 g new potatoes
  • 100 g radish
  • 4 fresh cucumbers
  • a bunch of dill
  • 1 litre  kefir or yogurt
  • salt and pepper
  • 2 eggs

Description

Okroschka with kefir was originally prepared in spring using seasonal vegetables. In spring, radishes, potatoes and herbs were the main ingredients. In summer, Okroschka was also prepared with cucumbers.

Later, the recipe was supplemented with cooked sausage, which over time became the basis of this dish.

Today you can replace kefir with liquid natural yoghurt. This will make Okroschka lighter.

The chilled Okroschka is served in serving plates with a boiled egg and absolutely with a piece of bread.

When preparing an Okroschka, it is very important to cut the ingredients properly. Each ingredient must be cut into bite-sized pieces.

1. Cut the sausage into cubes

2. Cut radishes into thin slices

3. Cut the cucumber into thin slices

4. Cook potatoes and chop to taste

5. Boil and halve the egg

6. Chop herbs

7. Mix all ingredients

8. Salt, pepper

9. Add kefir or yoghurt

10. Serve in serving plates with egg and separately with a piece of bread
