Bean soup

Bean soup

Are you looking for an original recipe for a party? With a pot of this hearty bean soup you can feed a whole football team without spending days in the kitchen.

Ingredients

  • 500 g of beef or veal
  • 100 g of white beans
  • 150 g red beans
  • 1 onion
  • 2 big potatoes
  • 1 big carrot
  • 1 parsnip
  • Salt and spices to taste
  • Fresh green herbs

Description

White and red beans mingle in this soup with veal or beef. This results in an ideal combination of vegetable and animal protein – this makes muscle cells grow and keeps the stomach occupied in a pleasant way. In addition, the beans contain a lot of fiber, so this soup also stimulates digestion.

Parsnips enrich the bean soup with their earthy, almost sweet taste and numerous nutrients. This is a traditional root vegetable, which used to be part of the daily diet in European countries. Then the yellowish-white parsnips fell into oblivion - until recently rediscovered. Parsnips contain many B vitamins and plenty of vitamin C as well as many minerals, including magnesium.
