Quark pancakes syrniki

In Russia, Belarus and Ukraine syrniki are a popular sweet dish. Here, the little pancakes with quark, a kind of fresh cheese, are baked for an extended Sunday breakfast. Mostly they are consumed with a dollop of sour cream.

Ingredients

  • 500 g cottage cheese, low-fat quark or fresh cheese
  • 120 g of flour
  • 50 g butter
  • 1 tsp baking powder
  • 10 ml of vanilla essence
  • 80 g of sugar
  • Pinch of salt
  • 2 eggs
  • 80 g of sour cream
  • Berry syrup

Description

The name "Syrnik" comes from the Ukrainian word "syr", which means "quark". In fact, this "quark" is a type of layered cheese, which is very popular in Eastern Europe. It can be bought in any well-equipped Russian supermarket.

 If this is not possible, one can fall back on cottage cheese or any kind of fresh cheese like Philadelphia. The dough is simple to prepare and you can vary the recipe according to your taste. For example, the flour can be replaced by semolina. Raisins can be added to the dough too – in this case it is possible to omit the sugar. Incidentally, Syrniki can also be prepared in the oven instead of being fried in the pan. That reduces the calorie content a little bit.

1. Crack the eggs.

2. Add sugar and salt.

3. Add butter (room temperature) and vanilla essence. Combine the mixture and stir well for 4 minutes.

4. Add the fresh cheese to the mixture.

5. Puree with a blender stick.

6. Stir again.

7. Add sieved flour.

8. Place the dough in cling film and roll it to a cylinder shape.

9. Refrigerate for 20 minutes.

10. Cut into even sized pieces.

11. Form little pancakes.

12. Fry in butter for 5 minutes on each side.

13. Place on a plate.

14. Garnish with dollops of sour cream.

15. Add some berry syrup or preserve.

16. Serve hot and decorate with berries.
