Poppy seed roll

Everyone knows the classic poppy roll. It must be soft, aromatic, sweet and slightly nutty! You can find many different recipes for this cake, but they all have something in common: yeast dough and lots and lots of poppy seeds.

Ingredients

  • 750 g of flour
  • 300 g of poppy seeds
  • 10 g dry yeast
  • 2 tsp of baking powder
  • 3 eggs
  • 220 g butter
  • 500 ml of milk
  • 100 ml of honey
  • 120 g of sugar
  • Pinch of salt

Description

In Russia, the poppy seed roll is often baked for Christmas. The yeast dough is rolled out relatively thin and covered with a rich filling of poppy seeds. The filling offers plenty of space for small improvisations: you can add grated orange or lemon peel, nuts, raisins, honey, etc.

In order to give the sweet cake roll its extraordinary fine taste, the poppy seeds are finely pureed. In addition, the finished poppy seed roll can be drizzled with a little fresh lemon juice or rolled in airy powdered sugar.

1. Mix yeast, salt and 2 tbsp sugar.

2. Add 100 ml warm milk.

3. Add 100 g of flour.

4. The pre-dough has to rest for 15 minutes.

5. Pour boiling water over poppy seeds and let them swell for 30-40 minutes.

6. Add sugar to the pre-dough.

7. Sift flour.

8. Add 120 g of butter.

9. Mix all the ingredients.

10. Knead dough with hands.

11. Add eggs, baking powder and sugar.

12. Place dough in a warm place and let it rise for 1 hour.

13. Place swelled poppy seeds into a bowl.

14. Add milk and 120 g of butter.

15. Add honey and boil until the milk has evaporated.

16. Puree the poppy seeds with a blender stick.

17. Place dough on the working surface.

18. Roll out dough to a thickness of 0.5 cm.

19. Cover with poppy seed mixture.

20. Form to a roll.

21. Brush roll with egg yolk and sprinkle with poppy seeds.

22. Bake for 40 minutes at 200 °C.

23. Serve warm.
