Matzo porridge is a national dish of Israel. The basic recipe describes a stuffed omelette of matzo and eggs. The filling can vary according to taste.

  • 3 eggs
  • 3-4 mushrooms
  • ½ onion
  • 1 pinch of cumin
  • salt
  • 30 ml olive oil
  • ground black pepper

This delicious, aromatic dish can be baked in the form of a cake. As a filling, juicy mushrooms work very well.

Matzo porridge can be cooked over open fire – the way of the nomads in ancient times. But the classic preparation in the kitchen is no less beautiful. Aromatic cumin and freshly ground black pepper give the dish a distinctive flavor.

1. Prepare all the ingredients.

2. Break the matzo into pieces and cover them with warm water so that the matzo can absorb almost all the liquid. The matzo should only be slightly covered with water so that hardly any liquid remains in the bowl.

3. Whisk the eggs.

4. Scoop out a deepening in the middle of the matzo mixture.

5. Add the eggs into the middle of the matzo.

6. Mix everything well.

7. Season with salt.

8. Finely slice the mushrooms.

9. Chop the onions.

10. Add olive oil into a hot pan.

11. Fry the onions.

12. Add comin.

13. Season with pepper.

14. Season with salt

15. Fry the onions until soft.

16. Add the mushrooms and simmer for 4 more minutes.

17. Cover the casserole dish with oil. Spread half of the matzo mixture in the dish.

18. Spread the sauted mushrooms and onions over the matzo mixture.

19. Cover with the rest of the matzo.

20. Close the casserole dish with a lid and bake in the oven at 180 degrees Celsius for 30 minutes.

21. Let the matzo porridge cool down.

22. Slice the matzo porridge.

23. You can serve the matzo porridge hot or cold.
