Pastries "Khovost"

The Russian words „Khovost“ or „Chworost“ can be translated into English as brushwood. The shape of the finished pastry resembles indeed thin branches of dried wood. Khovost is a very popular snack in Russia - not only for children.

Ingredients

  • 500 г муки
  • 150 г сахара
  • 100 мл молока
  • 2 яйца
  • 7 г сухих дрожжей
  • 50 мл растительного масла
  • 2 л растительного масла для жарки
  • 1 ч.л. соли

Description

The crunchy pastry sprinkled with icing sugar or brushed with honey is a part of the Russian dessert cuisine. The original recipe is not meant for kids, as it contains some rum, vodka or cognac. But since the little ones in Russia simply worship these sweets, alcohol is often abandoned.

The special thing about Chworost is, in addition to its unusual shape, the preparation: it is not baked, but deep fried in plenty of oil. This makes the pastry particularly airy and crisp - it almost melts on the tongue.

If you do not like it very sweet, you can replace the icing sugar with cocoa powder. Furthermore, Khovost is often decorated with nuts or raisins.

1. Mix sugar, yeast and salt. Add warm milk and 100 g of flour.

2. Add eggs to the pre-dough.

3. Carefully combine pre-dough with sifted flour.

4. Add 50 ml of vegetable oil.

5. Knead dough.

6. Let dough rise at a warm place for 1 hour.

7. Carefully remove dough from the bowl.

8. Roll out dough to a thickness of 3 mm.

9. Cut dough into even strips.

10. Carefully fold each strip into 2 halves.

11. Make a long cut in the middle. Divide the strips into 2 equal parts.

12. Pull each strip twice through the incision in the middle and form a kind of intertwining.

13. Heat up 2 l of vegetable oil.

14. Place Khovost into oil.

15. Fry on each side for 1 minute.

16. Using pliers, remove the pastry from the oil to drain off the excess oil.

17. Sprinkle with icing sugar before serving.
